Ingredients:
- Skewers – 12 bamboo skewers soaked in water for 30 minutes
- 1 lb. beef tenderloin, cut into 12 cubes
- 1 cup cilantro leaves, packed
- 1 cup flat-leaf parsley leaves, packed
- 2 tbsp. fresh oregano leaves
- 3 garlic cloves, quartered
- 1 small shallot, chopped
- 2 tbsp. red wine vinegar
- 1/2 cup extra-virgin olive oil
- Salt and pepper to taste
Instructions:
- In a blender or food processor, combine cilantro, parsley, oregano, garlic, shallot, red wine vinegar, salt, and pepper.
- Pulse until everything is chopped and well combined.
- With the machine running slowly drizzle in olive oil until everything is emulsified.
