If there's one thing I love grilling in the summer, it's a nice flank steak. And recently, I've been really into topping it off with a delicious chimichurri sauce. It's the perfect combination of zesty and fresh and really amps up the flavor of the steak.
Grilled Flank Steak with Avocado Chimichurri Sauce
Ingredients:
- 1 1/2 pound flank steak
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado
- 1/2 cup cilantro, packed
- 1/4 cup parsley, packed
- 2 garlic cloves
- 1/2 teaspoon red pepper flakes
- 2 tablespoons red wine vinegar
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1/4 teaspoon salt
Instructions:
- Combine the olive oil, salt, and black pepper in a small bowl. Rub this mixture all over the flank steak.
- Heat your grill to medium-high heat and grill the flank steak for about 5 minutes per side, or until it reaches your desired level of doneness.
- While the steak is grilling, make the chimichurri sauce by combining all remaining ingredients in a food processor and blend until smooth.
- Once the steak is done, remove it from the grill and let it rest for 10 minutes. Slice against the grain and serve with the avocado chimichurri sauce on top.
